In regard to this drink the bartender must use his own judgment and use the proportions in accordance to the quantity to be made. For a three gallon bowl mix as follows:

powdered sugar
(pulverized sugar)
Ingredient: powdered sugar
Also Known As: Superfine sugar What it is: AdditiveVery fine powdered sugar. In industrial food production, it is used where a quick dissolving sugar is required. Powdered sugar is generally mixed with cornstarch, wheat flour, or calcium phosphate to improve its flowing ability, and thus it is not generally used to sweeten beverages, but is used as a garnish.

have yolks separated; beat as thin as water, and add the yolks of the eggs into the sugar adn dissove by stirring

What it is: AdditiveBird eggs are a common food and one of the most versatile ingredients used in cooking and have long been used in drinks. Usually used to add consistency and foam, egg whites and yolks are usually separated with "silver" indicating the white and "golden" the yolk. Modern chicken eggs are much larger, so use the smallest ones available.

Also Known As: V.S.O.P or X.O. brandy What it is: BrandySpirit produced by distilling wine, the wine having first been produced by fermenting grapes. When used generically, "brandy" typically refers to grape brandy. Old brandy has been aged at least three years and is typically labeled V.S.O.P or X.O.

Jamaica rum
Ingredient: Jamaica rum
What it is: RumGeneric term for dark rum from Jamaica. Dark rum differs from gold in that some residual molasses is retained in the final product, in order to slightly sweeten the flavor. Very popular in the late 1800s and superior to most New England rums. Modern approximations include Inner Circle, Gosling's Black Seal and Pusser's Navy Rum.

Ingredient: milk
What it is: AdditiveOpaque white liquid produced by the mammary glands of mammals.
Mix the ingredients well with a ladle, and stir continually while pouring in the milk to prevent it from curdling; then beat the whites of the eggs to a stiff froth and put this on top of the mixture: then fill a bar glass with a ladle, put some of the egg froth on top, grate a little nutmeg over it and serve. This will give you a splendid Egg Nogg for all New Years callers.
