Also Known As: sugarloaf What it is: AdditiveTraditional form in which refined sugar was produced and sold until the late 19th century when granulated and cube sugars were introduced. A tall cone with a rounded top, it was the end product of a process that saw the dark molasses-rich raw sugar, which had been imported from sugar cane growing regions such as the Caribbean and Brazil, refined into white sugar. Raw cane sugar the best, easily available substitute.

Also Known As: anis, liqueur d'anis What it is: LiqueurAnise-flavored liqueur that is sweeter than most anise-flavored liqueurs (such as pastis), and also has a lower alcohol content (typically 25% by volume, versus 40%). Like pastis, it was first created to replace absinthe. Marie Brizard is a well-known producer of French-style anisette. Anís del Mono is a Spanish brand. Sambucca Romana is one of Italy's versions.

Also Known As: Kimmel What it is: LiqueurA sweet, colorless liqueur flavored with caraway seed, cumin, and fennel. According to the Dutch, kümmel liqueur was first distilled in Holland during the late 16th century by Lucas Bols. It was then taken to Germany and Russia; the latter is now the principal producer and consumer of kümmel.

Also Known As: Curaçoa What it is: BittersLiqueur flavored with the dried peels of the laraha citrus fruit, grown on the island of Curaçao. Earlier versions were based on brandy or rum but now use neutral spirits.
Stir up well with a punch ladle, and surround the bowl with ice, and serve in a wine glass.
