What it is: AdditiveMany 19th century recipes specifically called for white sugar, which is more refined and preferred over browner sugars. But modern white sugar is probably too refined, making raw cane sugar the best, easily available choice.

Ingredient: Sauternes
Also Known As: Sauterne What it is: WineFrench dessert wine from the Sauternais region of the Graves section in Bordeaux. Sauternes is made from Sémillon, Sauvignon Blanc, and Muscadelle grapes that have been affected by Botrytis cinerea, also known as noble rot. (Lesser quality "sauterne" is made from blended white wines.)
The same as claret punch, using Sauterne instead of claret.
(Fill the tumbler with shaved ice, and then pour in your Sauterne, shake well, and ornament with berries in season. Place straw in the glass.)
